Pasta Pizza Salad
When a recipe is a home run around the table, you just know it.
20 years ago, this recipe was given to me by my friend Ruth, and forever since it has been known in my house as “My Pasta Salad.” (sorry Ruth!)
Whenever our family and extended family gathers…this is the one I am almost always requested to bring.
It’s a win for picnics and outdoor activities as it has no mayo base and keeps well on those family buffet tables that can stretch out for hours on steamy afternoons at the lake.
I love the colors, texture and burst of flavors in this dish. It is an explosion of brightness in my serving bowl!
The base ingredients are easy to keep on hand in the pantry! Multiple times throughout the year I find myself pulling out this recipe for an impromptu gathering with minimal effort.
Options are endless to add variety and bit of sass to your own rendition of this dish. I have omitted tomatoes and added peppers and cucumbers instead. If I have cheese, I add it … if not it is just as good without. When I have it, I often switch out the cheddar for feta, or use them both if I am short on either!
If you are lucky enough to have leftovers for lunch the next day, add a splash of red wine vinegar and a dash of grated parmesan cheese to refresh the pasta for maximum flavor.
Pasta Pizza Salad- Serves 16
Whisk together the remaining ingredients and combine with pasta mixture. .
- 1 lb spiral tri-color pasta (cooked, drained and cooled)
- 3 chopped and seeded tomatoes (I like to use romas)
- 1 lb cheddar cheese cubed
- 1-2 green onions chopped
- 3 oz sliced pepperoni, quartered
combine all of the above in a large bowl
- 2/3 parmesan cheese ( I use the grated from a can)
- 1/2 c red wine vinegar
- 2tsp oregano
- 1tsp garlic powder
- 1tsp salt/pepper to taste
Stir, sample and enjoy!
