Amazing Quinoa Salad

Hubby and I have been working on a plan to weave more fruits and veggies into our meals and recently we committed to writing down everything we ate for seven days.

Talk about eye-opening—way too many carbs, starches, dairy, and far too few fruits and vegetables.

We had no idea. Something needed to change.

I am determined to discover salads that can be more than greens. Eating healthy in my home will slip into the dull and boring category in short order if this is all I have to choose from.

Recently I came across a WONDERFUL recipe for quinoa salad. I changed it a bit to make it suit us and am posting my updated version below.

The Most Amazing Quinoa Salad

2C uncooked quinoa 

2 apples 

2 oranges 

1/8 C chopped green onions

1C dried cranberries 

2/3C pecans 

1/2C feta cheese 

Dressing: 

2/3C olive oil 

4T lime juice 

4T apple cider vinegar 

4T honey

1t thyme fresh or dry 

Salt and pepper to taste 

1 1/2C cooked chicken chopped in bite-size pieces.

  1. Cook quinoa according to the package instructions and allow to cool.
  2. Combine all of the ingredients into a large bowl and toss with the dressing.
  3. Refrigerate for an hour before serving.
  4. Top with chicken and extra feta before serving.

This keeps well for several days which means there is now lovely leftovers on my shelf for an easy lunch or to pair with soup for another meal.

My motto is always to make more than you need. Most meals can be eaten a day later, frozen for future busy days, or dropped off to a busy friend or neighbor to bring a smile to both their face and your heart!
