Belgian Waffles
Easy meals are a win no matter what stage of life you are in. When our kids were younger, and days were full to over flowing, on occasion we would announce we were having breakfast for dinner… and they LOVED it.
I loved it because it was easy, economical, nothing had to be done ahead of time and it could be pulled together without having to dash to the store for missing ingredients.
We might have eggs and bacon or simply french toast or waffles.
This week my two grandsons were spending the week with us and I made a meal for them of waffles, waffles and more waffles.
They loved them just as much as their mom did years ago, and so did we!
There are many recipes for this beloved meal and I have used several throughout the years. This one has a dash of cinnamon mixed into the batter and it has become a favorite in our home. Hope you love it too.
Hint …. if you have left over waffles, lay them on cookie sheet on parchment paper in a single layer, freeze them and then put them in a zip lock back. Later you can simply pop them in the toaster or air fryer. Your future self will love you for it!
Belgian Waffles
Preheat your waffle iron and spray with cook spray:
Ingredients:
2 1/4 All Purpose flour
1 Tablespoon Baking Powder
3 Tablespoon Sugar
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
2 Eggs
1/2 Vegetable Oil
2 Cups Milk
1 Teaspoon Vanilla Extract
In a large bowl beat eggs, vegetable oil, milk and vanilla extract. Combine with the dry ingredients and mix well.
Pour the batter on the hot waffle iron until desired brownness.
Serve with your favorite toppings! My personal favorite is to squeeze lemon juice on a hot waffle and sprinkle confectioner’s sugar on top.)
